If Moroccan cuisine had a signature scent, it would be written in three words: Ras El Hanout. Literally 'top of the shop' in Arabic, this blend is the best-of an Arab grocer offers to his best customers.

What is Ras El Hanout?

Ras El Hanout is a traditional Moroccan blend that brings together between 12 and 35 spices depending on the house. There is no single official recipe — each family, each grocer, each city has its own version. At Pepironi, we use a 22-spice formula, calibrated to the gram.

How to use it

  • In a meat tajine: 1 tablespoon per kg of meat
  • On roasted vegetables: half a teaspoon with olive oil
  • On warm popcorn: a pinch is enough
